Pan Fried Barbecue Chicken
1/3 cup oil
6 chicken pieces
1 cup flour
1 teaspoon salt
1/2 teaspoon chili powder
1/4 teaspoon pepper
1 cup catsup
1/2 cup brown sugar
1 small onion -- chopped
2 tablespoon Worcestershire sauce
2 Tablespoon mustard
1/4 cup vinegar
1/4 cup water
Preheat large skillet and add oil. In large plastic bag combine flour,salt,chili powder and pepper. Add chicken pieces and shake well. Place chicken in skillet, skin side down. Fry until golden brown. Heat catsup, brown sugar, onion, Worcestershire sauce, mustard, vinegar and water to boiling; simmer. Turn chicken skin side up and fry to brown. Pour sauce on chicken and simmer for 45 minutes or until chicken is done. Serves 6.
Michelle's notes: I have also made the sauce and baked my chicken, when the chicken is almost half cooked, I add the sauce and let it keep baking till chicken is cooked through. We love to dip our biscuits in the sauce with the chicken!
