Alexandra's Heavenly Cucumber Salad
Serves 6
3/4 teaspoon salt
3 medium fresh cucumbers, peeled and sliced thin
1 clove garlic, cut in half - lengthwise (optional)
1 Tablespoon olive oil
1/4 cup wine vinegar or cider vinegar
2 Tablespoons water
2 teaspoons granulated sugar
1/4 teaspoon paprika
A pinch of pepper
Slice and salt cucumbers and let them stand in a large bowl. After 30 minutes, the juice will have drained out. In a separate bowl, mix oil, vinegar, water, and sugar. (If desired, rub bowl first with garlic halves). Add drained cucumbers and mix well. Sprinkle with paprika and pepper. Cover and chill for 30 minutes before serving.
