Broccoli Walnut Salad
2 bunches broccoli
Water
2 celery stalks, diagonally cut
1/2 cup sliced button mushrooms
1/2 cup walnut pieces
Dressing:
1/3 cup walnut or peanut oil
2 tablespoons orange juice
2 teaspoons minced garlic
1/2 teaspoon salt
Sliced red pepper and orange sections
Cut bite-size florets from broccoli; blanch in boiling water for 3 minutes. Refresh in cold water; drain.
In a large bowl, toss broccoli with celery, mushrooms and walnut pieces; set aside.
Make a dressing of walnut or peanut oil, orange juice, minced garlic and salt. Toss all ingredients well with dressing. Transfer to serving platter and garnish with sliced red pepper and orange sections.
Serves 4-6
