Roast Beef Salad
3 cups diced cooked roast beef
2 small dill pickles, chopped fine (1/4 cup)
2 tablespoons minced onion
Minced parsley
1/2 cup mayonnaise
2 tablespoons wine vinegar
1 tablespoon oil
1 tablespoon prepared mustard
1/4 teaspoon salt or to taste
1/8 teaspoon fresh ground black pepper
In large bowl combine beef, pickles, onion and 2 tablespoons parsley. Mix mayonnaise, vinegar, oil, mustard, salt and pepper; pour over salad and toss well. Chill. Garnish with parsley.
