    Brisket Rub

    Chili powder, garlic powder and assorted peppers, among other seasonings, add some punch to slow-cooked, tender brisket at Oklahoma Joe's Barbecue Restaurant in Kansas City, KS.

    2 tablespoons sugar
    1 tablespoon salt
    1 tablespoon MSG (monosodium glutamate; optional)
    1 tablespoon chili powder
    2 teaspoons paprika
    2 teaspoons lemon-pepper seasoning
    2 teaspoons onion powder
    2 teaspoons garlic powder
    2 teaspoons ground black pepper
    1 teaspoon cayenne pepper

    In a small bowl, stir together the sugar, salt, MSG (if you like), chili powder, paprika, lemon-pepper seasoning, onion powder, garlic powder, black pepper and cayenne pepper. Store in a covered container at room temperature.

    Makes about 1/2 cup
