St. Clair Italian Spaghetti
Italian spaghetti is as popular in the Lewiston, Maine, firehouse as it is in firehouse kitchens throughout the U.S.A. It ties for first place with another firefighter favorite - chili con carne.
1/2 cup onions
1/2 pound ground beef
2 tablespoons olive oil
1 tablespoons butter or margarine
1 garlic clove
1 (10-3/4-oz.) can tomato soup
1 (6-oz.) can tomato paste
1 (No. 2) can tomatoes, drained
1 (10-1/2-oz.) can beef broth
Salt and pepper to taste
1 teaspoon oregano
1/2 tablespoon sugar
Spaghetti
Chop onions and garlic. Brown onions and ground beef in olive oil. Add butter, garlic, and remaining sauce ingredients. Simmer about 2 hours, until thickened, stirring occasionally. Skim off excess fat and serve over hot, cooked spaghetti.
Serves 6
Note: A whole raw potato can be added to absorb grease while sauce is simmering. It should be removed when soft.
