Baked Potato-Hamburger Treat
6 medium baking potatoes (about 3 pounds)
1 pound lean ground beef
1 can (4 oz.) mushroom stems and pieces, drained and chopped (reserve liquid)
1 small onion, chopped
3 tablespoons margarine, divided
Milk
1-1/2 teaspoons salt or to taste
Freshly ground black pepper
1 cup shredded process American or Cheddar cheese
Minced parsley
Bake potatoes in 400° oven until tender, about 1 hour. Meanwhile, in heavy skillet cook beef, mushroom pieces and onion in 1 tablespoon margarine until beef is browned. Drain off any fat. Add enough milk to mushroom liquid to make 2/3 cup.
Slice off side of each potato. Leaving sturdy shells, scoop out potato pulp into a bowl. Add mushroom-milk mixture and whip or mash potatoes until fluffy. Season with salt and pepper. Stir in meat mixture. Fill shells, mounding high. Sprinkle with cheese. Broil until lightly browned and hot, 3 to 5 minutes.
Garnish with minced parsley.
