Delmonico Potatoes
1 tablespoon butter
1 thinly sliced onion
1 tablespoon minced garlic
2 tablespoons chopped fresh parsley
2 cups shredded Swiss cheese
1-1/2 cups milk
2 cups sour cream
1/2 teaspoon salt
1/4 teaspoon pepper
6 large peeled potatoes
Garlic croutons
On low heat, in butter, saute onion, garlic, and parsley. Cook 2 minutes. Add Swiss cheese, milk, sour cream, salt and pepper; blend well. Thinly slice pared potatoes and layer bottom of a large greased casserole with half of the potato slices. Top with half of cream mixture. Layer remaining potatoes and top with cream mixture.
Bake covered on a tray for 1 hour at 350� F. Remove cover. Bake 1 hour longer. Top with garlic croutons and bake an additional 15 minutes. Cool 10 minutes.
