Fulkerson's Tomato Pudding
Makes a nice side dish to any meal!
2 cups canned tomatoes, drained and slightly broken up
1-1/4 cups well-crumbled toasted bread
3/4 cup brown sugar
1/3 cup melted butter
1 teaspoon salt
1/2 teaspoon pepper
Preheat oven to 350° F. Grease a small baking dish. Mix the tomatoes, bread crumbs, brown sugar, butter, salt and pepper in a bowl. Transfer to the baking dish and bake until the pudding bubbles and browns, about 50 minutes. Let cool a little before serving.
Serves 4
