Orange Candied Beets
2 pounds beets
Water
2 teaspoons vinegar
1 cup orange juice
2 teaspoons honey
2 to 3 dashes ground cumin
2 teaspoons red wine vinegar
2 teaspoons grated orange zest
2 tablespoons chopped scallions
Salt and pepper to taste
Rinse beets; cover with water. Add the 2 teaspoons vinegar. Simmer, covered for 40 minutes. Refresh in cold water. Peel off skins. Cool 10 minutes; cut into 3/8" thick slices.
In a saucepan, bring to a simmer orange juice, honey, ground cumin and red wine vinegar; reduce until liquid is thickened. Add beets, orange zest and chopped scallions. Season to taste with salt and pepper.
