    Piedmont Cabbage

    1 small Savoy cabbage, cut into 4"x3/4" strips
    4 large plum tomatoes
    2 tablespoons olive oil
    2 tablespoons minced garlic
    1 red onion, sliced
    2 tablespoons chopped fresh basil
    1 teaspoon celery seed
    1 cup sliced fennel
    1/2 cup tomato juice
    Salt and freshly ground black pepper
    Shaved Parmesan cheese

    Slice cabbage; blanch the tomatoes in boiling water. Peel, cut into 1/2" sections and set aside.

    In a large pan, saute in olive oil on medium heat, garlic, onion, chopped basil, celery seed and fennel. Cook for 2 minutes. Add cabbage and tomatoes; toss well. Cook, covered for 3 minutes. Remove cover. Add tomato juice and let simmer 5 to 10 minutes. Adjust seasoning with salt and pepper. Serve in casserole, topped with shaved Parmesan cheese.
