Potato Pancakes (using leftover mashed potatoes)

1 cup sifted flour
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1 cup left-over mashed potatoes
1 1/2 cups milk
Beat eggs with electric mixer; add potatoes and mix thoroughly. Add mixed and sifted dry ingredients alternately with milk. Beat vigorously for 1 minute. Bake on hot, electric griddle until delicately browned.
Makes 2 dozen, 3-inches in size
