Red Chili Onion Rings

Red Chili Onion Rings
2 large yellow onions, peeled and sliced into thin rings
1-1/2 cups whole milk
2-3 cups canola oil
1 cup flour
2 tablespoons paprika
1 tablespoon good chili powder
1 teaspoon cayenne
1 teaspoon salt
More salt to taste
Soak onion rings in milk for 1/2 hour. Heat oil to about 350°. Mix together next 5 ingredients. Drain onions and toss in flour mixture. Fry in oil until golden. Drain on paper towels, season with salt and serve.
Serves 1-6 (it depends!)
Note: Don't dredge onions in flour until you are ready to fry them.
