    Savory Sweet Potato Fries

    3 large sweet potatoes
    Cold water
    Oil
    2 tablespoons each: chopped fresh parsley, tarragon and rosemary
    2 teaspoons lemon juice
    1/2 teaspoon ground cumin
    Salt and pepper to taste

    Peel sweet potatoes and cut in half lengthwise. Cut each half into long wedges. Soak in cold water, covered for 1 hour. Drain potatoes; pat dry.

    In a heavy-bottomed pot, fry batches in 3 inches of hot oil for 3-5 minutes or until edges are browned. Drain on paper towels. Keep warm.

    Place potatoes in bowl. Add chopped herbs, lemon juice, cumin, salt and pepper to taste. Toss well to coat potatoes.

    Serves 4-6
