    Spiced Orange Carrots

    2 cups baby carrots
    Water
    2 cups thinly sliced onions
    1 tablespoon butter
    2 tablespoons orange marmalade
    1 tablespoon grated orange zest
    1 tablespoon orange juice
    1 tablespoon freshly grated ginger
    Dash or 2 of nutmeg
    Fresh ground pepper
    Chopped fresh parsley

    Blanch baby carrots in boiling water for 6-8 minutes. Drain and set aside.

    In a large frying pan, saute onions in butter on low heat for 2 minutes. Do not brown. Add carrots, orange marmalade, orange zest and juice; stir to combine on very low heat. Season with grated ginger and nutmeg.
    Sprinkle with pepper and chopped parsley to serve.

    Serves 4-6
