Wartime Scalloped Potatoes

1 1/2 pounds all-purpose potatoes -- peeled and sliced
thin
2 tablespoons shortening or bacon fat
3 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon dry mustard
2 cups milk
2 large onions -- thinly sliced
Cooked bacon or ham -- optional
Cook potatoes in boiling salted water to cover for 10 minutes; drain well.
Meanwhile, in a heavy saucepan, over low heat, melt shortening. Stir in flour, salt, and mustard until smooth. Very gradually stir in milk; cook over low heat, stirring constantly until sauce has thickened.
Preheat oven to 350 F. Generously grease a 9-inch (6-cup) baking dish.
Place one-third of potatoes in dish in an even layer; top with one-third of onions and 1/2 cup of sauce. Repeat layering twice, ending with 1 cup sauce. If desired, add bacon or ham with onions in first 2 layers.
Place on rimmed baking sheet and bake 40-45 minutes or until browned and bubbly.
