    Welshfield Inn Glazed Carrots

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 medium can carrots -- sliced
    1 1/2 cups pineapple juice
    2 tablespoons orange juice concentrate
    2 tablespoons fresh lemon juice
    1/2 cup sugar
    1/4 cup cornstarch

    Drain the carrots and reserve juice. Combine all of the other ingredients, except cornstarch in a saucepan and bring to a boil. Take 1 cup carrot juice and the cornstarch and blend together. Add to the ingredients in saucepan to thicken the sauce. Add alittle diced lemon and orange. Serve hot.

    Serves 4
