    Peanutbutter cupcakes

    List of Ingredients




    1/3 c. shortening
    1 c. brown sugar, firmly packed
    6 tbsp. creamy peanut butter
    2 eggs
    2 c. sifted flour
    1/2 tsp. salt
    2 1/2 tsp. baking powder
    3/4 c. milk
    1 tsp. vanilla

    Frosting:

    1/4 c. soft butter
    1/3 tsp. salt
    2 c. confectioners sugar
    3 tbsp. milk
    1 tsp. vanilla
    1 tbsp. peanut butter

    Recipe



    Cream shortening with brown sugar. Add peanut butter and mix well. Beat in eggs. Add dry ingred alternately with milk and vanilla. Fill paper lined cupcake tins half full of batter. Bake 25 min at 350. 2 dz.

    Frosting : Place butter, salt, vanilla, peanut butter and confec sugar in bowl. Add half the milk, stir or beat - add remaining milk to make mixture of spreading consist.

    I actually like this cake best with chocolate frsoting which I make the same way except instead of peanut butter I add a couple good sized tbsp. cocoa.
