    Pineapple Cheesecake Squares

    List of Ingredients




    2 pkgs (8 oz) cream cheese, softened
    1/2 cup sugar
    2 eggs
    2/3 cup pineapple juice
    1/4 cup flour
    1/4 cup sugar
    1 can (20oz) crushed pineapple, drained (reserve juice)
    1/2 cup whipping cream

    Crust:
    2 cups flour
    2/3 cup marg or butter, softened
    1/2 c. almonds, finely ch & toasted
    1/2 cup powdered sugar

    Heat oven to 350. Mix crust and pat into a 13/9 pan. Bake until set or about 15 - 20 min.

    Beat cream cheese until fluffy. Beat in 1/2 cup sugar and the eggs. Stir in 2/3 c. pineapple juice. Pour cream cheese mixture over hot crust and bake until center is set, about 20 minutes. Cool completely

    Mix flour and 1/4 cup sugar in squcepan and stir in 1 cup reserved juice. (if not enough add water tomake 1 cup) Heat to boiling over med heat, stirring constantly. Cook 1 minute and remove from heat. Fold in crushed pineapple. Spread carefully over the dessert. Cover and refrig until firm about 4 hours. Makes 12 3 in squares.
