    Elegant Cheese-filled Chicken Rolls

    List of Ingredients




    1 container (15 oz) part skim ricotta cheese
    1 pkg (10 oz) frozen chopped spinach, thawed and squeezed
    dry
    1/2 cup ch. onion
    1/3 cup grated parmesan cheese
    1 1/4 tsp. italian seasoning, crushed
    1 tsp. crushed garlic
    1 1/2 tsp. salt
    1/4 tsp. black pepper
    12 boned and skinned chicken breast halves (3 1/2 lbs) and
    pounded to 1/4 in. thick
    5 tbsp. butter, melted
    2sheets frozen phyllo dough, thawed

    Recipe



    In bowl combine ricotta cheese, spinach, onion, parmesan cheese, italian seasoning, garlic, salt and pepper. Set aside.
    Place pounded chicken breast halves on a clean work surface and cover each with 3 tbsp. cheese mixture. Spread over the breast and roll up jelly-roll style, tucking in the sides. Brush each with melted butter.
    To wrap:
    On clean surface place 2 sheets phyllo dough on top of each other; fold in half crosswise. Place a chicken roll at narrow end of the phyllo, roll up, folding in sides so chicken is completely wrapped. Brush with melted butter.

    Place on a shallow baking pan and bake uncovered in a 400 deg oven until tolden, 20-25 min.

    These also can be frozen. Thaw in refrig and bake as above.
