Banana Nut Bread
List of Ingredients
1/4 c butter, softened
1/4 c shortening
2/3 c sugar
2 eggs
1/2 tsp vanilla
1/4 tsp butter flavoring
2 tbsp milk
1 3/4 c sifted flour
1 1/4 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
1 c mashed bananas, about 3 medium, ripe
1/2 c chopped pecans
Recipe
Preheat to 350. Grease and flour 2 loaf pans, 4 x 7.
Cream together the butter, shortening and sugar until light and fluffy.
Scrape sides of bowl often.
Add eggs, one at at time and mix well between each addition.
Add vanilla and butter extracts. Mix well.
Add milk. Mix well.
Sift together the flour, baking soda, baking powder and salt.
Add dry ingredients to the creamed mixture, alternating with the mashed bananas. Be sure to begin and
end with dry ingredients.
Add nuts.
Pour into prepared pans.
Bake 30 to 40 minutes, or until a toothpick tests clean.
Cool in pans for 10 minutes.
Remove from pans and cool completely.
Makes 2 loaves.
NOTES:
I omitted pecans.
I baked in 8 1/2 by 4 1/2 loaf pans and needed 40 minutes baking time.
I added 1/2 tsp banana flavoring to the batter.
