This is very similar to my other recipe, the main difference being the egg and banana amounts. This recipe does
not include a glaze.
2 c flour
1 tsp baking powder
1 1/2 tbsp poppy seeds
1/2 tsp salt
1 large egg
3/4 c granulated sugar
1/4 c oil
2 tsp dried grated orange zest
1 medium ripe banana, smashed
Recipe
Preheat 375. Lightly grease muffin pan or line with paper baking cups.
Beat the egg until foamy. Add the sugar, oil, zest, and banana and beat well.
Add dry ingredients and poppy seeds and blend until just moistened.
Spoon into muffin cups, about 1 heaping tablespoon each. This is a thick batter.
Bake for 15 to 20 minutes and test with a toothpick.
Cool on a wire rack in the pan for 5 to 7 minutes, then remove and cool on a wire rack.
Makes 12 muffins.
NOTES:
Good warm or cold. I double the recipe with no problem.
