Banana Streusel Coffee Cake

Great flavor and a quickie to make.
List of Ingredients
Topping:
1/4 c butter (4 tbsp)at room temperature
1/3 c sugar
1/3 c flour
1/3 to 1/2 c chopped, toated walnuts, optional
Cake:
1/4 c (4 tbsp) butter at room temperature
6 tbsp sugar
1 tsp vanilla
2 eggs, room temperature
2 overripe bananas, mashed
1 c plus 6 tbsp flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp kosher salt
1/2 tsp cinnamon
1/3 c buttermilk, yogurt or sour cream
Recipe
Topping:
Combine topping ingredients in food processor and mix until combined. Add nuts, if desired. Set aside.
Cake:
Place butter, sugar and vanilla in mixer bowl and beat until light and fluffy. It should be light, lemon colored - beat about 3 to 5 minutes.
Add eggs, one at a time, beating well and scraping between each addition.
Add bananas and mix until well combined.
Scrape sides and add flour, baking powder, baking soda, salt and cinnamon - mix until well combined.
Add buttermilk (or yogurt or sour cream) and mix until smooth.
Preheat to 375.
Scrape bowl and mix slightly, then pour into prepared 8 inch square pan.
Cover with topping and bake for 30 to 35 minutes or until the top is just beginning to lightly brown.
Makes 9 pieces.
Notes:
I used unsalted butter, large eggs did not use nuts.
The bananas I used were frozen but partly thawed before adding.
I used buttermilk powder and water.
Next time I will use less butter in the topping, cutting it to 3 tbsp.
I had to bake 40 minutes so will try baking this in a 9 inch square pan, the middle did not want to finish baking.
