Blueberry Muffins

List of Ingredients
1/2 c butter
1 c sugar
2 eggs
2 c flour
2 tsp baking powder
1/2 tsp salt
1/2 c milk
2 c blueberries, fresh or frozen
1 tsp vanilla
2 tsp sugar, for tops
Recipe
Preheat to 375.
Prepare 12 muffin cups.
Cream butter and 1 c sugar on low speed of electric mixer.
Mix until fluffy.
One at a time, add eggs and mix well after each addition.
Sift flour, baking powder and salt.
Alternately add dry ingredients and milk to the creamed mixture, mixing well after each addition.
Stir in vanilla.
Carefully stir in blueberries.
Fill muffin cups, piling batter high.
Sprinkle with 2 tsp sugar.
Bake for 30 minutes.
Notes: I used unsalted butter, large eggs and frozen blueberries.
If using frozen berries, dust with flour before adding to batter.
I lined muffin tins with paper liners, which I sprayed.
I sprinkled the tops with 2 tsp vanilla sugar.
I baked for 32 minutes.
