Crab Au Gratin

This is wonderful. The flavor is fantastic, it's very filling and absolutely delicious.
List of Ingredients
3 tbsp butter
1/2 c finely chopped onions
1/4 c finely chopped celery
1 heaping tbsp flour
1 1/2 c milk
dash of white pepper
pinch of nutmeg
1/2 tsp prepared mustard
3/4 c grated Cheddar cheese

1 egg yolk, well beaten
2 tbsp lemon juice
1 lb crab meat

3 tbsp bread crumbs
1/4 c grated cheddar
dash of cayenne pepper
dash of paprika
Recipe
Combine butter, onions and celery in a heavy saucepan.
Over medium heat, saute unitl the veggies are soft and transparent.
Add flour and stir in well to blend until smooth.
Add milk and stir constantly until smooth.
Stir in pepper, nutmeg, mustard and cheese.
Preheat oven to 375.
Remove from heat. Add beaten egg yolk and lemon juice.
Stir well.
Add crab meat and stir to mix.
Butter a 9x9 baking dish. Pour crab mixture into prepared dish.
Top with bread crumbs, 1/4 c cheese, cayenne and paprika.
Bake for 15 to 20 minutes or unitl to is brown and crusty.
Notes:
I used about 1 1/2 lb "fake" crab meat, unsalted butter, a large egg, and low fat milk.
I baked for 22 minutes.
