    Cream Cheese Muffins

    Recipe Introduction

    Excellent muffins! Much of the work is done by your blender, then just a quick stir and bake. Fast, simple and delicious.

    List of Ingredients


    3 c flour
    3/4 c sugar
    4 tsp baking powder
    pinch of salt
    8 oz cream cheese, room temperature
    2 eggs
    1 c milk
    1 tsp vanilla
    1/2 c butter, melted and cooled

    extra sugar to sprinkle on top



    Recipe


    Preheat to 400.
    Grease 16 muffin cups.
    In a blender, mix the cream cheese and eggs.
    Blend until completely smooth.
    Add milk, vanilla, and melted butter.
    Blend until completely mixed.
    Sift the flour, sugar, baking powder and salt together in a large bowl.
    Pour the blended ingredients into the dry ingredients and then stir with wooden spoon until completely combined - do not over mix.
    Spoon into muffin cups.
    Sprinkle each with the additional sugar.
    Bake for 25 to 30 minutes* or until they are firm and just beginning to brown on the edges.
    Cool slightly, then remove from muffin pan.

    NOTES:
    I used regular cream cheese, large eggs and unsalted butter.
    I baked for just 20 minutes.
    I topped mine with vanilla sugar and it was wonderful.

    Makes 16.
