Garbanzo Casserole
List of Ingredients
1/2 lb pepperoni, sliced
2 whole chicken breasts, about 12 oz
1 c chopped onion
2 cloves garlic, chopped
4 medium carrots, pared and sliced
2 c shredded cabbage
2 cans (19 oz each) garbanzo beans, drained
1 can (16 oz) tomatoes
1 tbsp salt
1 tsp thyme
1/2 tsp pepper
Recipe
Saute pepperoni in a lage skilled for about 5 minutes. Remove. Save drippings.
Cut chicken breasts into 2 inch pieces. Brown in reserved drippings, then remove.
Saute onion and garlic in drippings; add carrots and cook 3 minutes.
Add cabbage and cook 2 minutes.
Preheat to 325.
Add garbanzos, tomatoes, salt, pepper, and thyme to skillet. Stir to blend well.
Add chicken and pepperoni.
Spoon mixutre into a greased 3 quart casserole.
Cover and bake for 1 hour or until chicken is tender.
