Herbed Pork Roast

Recipe Introduction
Simple and delicious.
I think this herb rub would be delicious on a roast cooked in your favorite way.
List of Ingredients
1 tsp salt
1 tsp thyme
1/2 tsp sage
1/2 tsp ground cloves
1 tsp grated lemon peel
4 large cloves garlic
2 tbsp cornstarch, optional
2 tbsp water, optional
1 pork roast, about 4 to 5 lb, boneless or bone-in
Recipe
Combine salt, thyme, sage, cloves, and lemon peel. Mix.
Rub into pork roast.
Cut 16 small pockets in roast and insert garlic pieces.
Place in slow cooker and cook on low for 7 to 9 hours, or on high for 4 or 5 hours.
Meat should reach an internal temperature of 170.
Allow to stand 10 or 15 minutes before cutting.
Remove garlic, slice and serve.
For gravy, combine juices with cornstarch and water.
Stir until thickened, on high setting.
NOTES:
I used the rub on pork chops, let them cook on low and they were delicious.
