Janet's Coffee Cake

List of Ingredients




3/4 c sugar
1/3 c shortening
1 egg
1 tsp almond extract
pinch of salt
1 tsp baking soda
1 tsp baking powder
1 1/2 c flour
2/3 c buttermilk

Topping:
1/2 c sugar
1/4 c flour
1 tsp cinnamon
1/2 c brown sugar
1/4 c butter, softened

Recipe



Mix first 9 ingredients to make cake batter. Pour half into a greased 9 inch square pan.

Mix topping ingredients together with a pastry blender.

Place 1/2 of the topping on the cake batter.

Pour remaining batter over the streusel layer, then top with remaining streusel.

Bake at 350 for about 30 minutes.

Notes:
For a larger amount, triple recipe well and bake in 2 - 9 x 13 pans. Freezes well.
