Jordan Marsh Blueberry Muffins 2

Recipe Introduction
These muffins are good, very moist and flavorful.
List of Ingredients
8 tbsp (1/2 c) unsalted butter
1 1/4 c sugar
1/2 tsp salt
2 large eggs
2 c flour
2 tsp baking powder
1/2 c milk or buttermilk
2 c fresh blueberries, rinsed, drained and dried
Topping:
1/4 c sugar
1 tbsp cinnamon
Recipe
Set rack in the middle of the oven and preheat to 375.
Cream butter, sugar, and salt until light.
Beat in eggs, one at a time, until smooth.
Combine flour and baking powder.
Add to batter alternately with the buttermilk.
Crush 1/2 c blueberries.
Add to batter and mix well.
Add remaining blueberries and stir in gently.
Fill muffin cups and sprinkle tops with a mixture of sugar and cinnamon.
Bake for 30 minutes until well risen and deep golden in color.
Cool muffins in pan.
Makes 12 very large or 18 regular muffins.
Notes:
I used buttermilk powder and water.
I have not tried this with frozen blueberries, only fresh.
