Recipe Introduction
A very basic muffin with good flavor. It's also easy to change the flavor by adding your choice of extracts, etc.
List of Ingredients
1/3 c butter, softened
1/4 c sugar
1/4 tsp salt
4 tsp baking powder
1 egg, well-beaten
3/4 c milk
2 c sifted flour
Recipe
Preheat to 400.
Cream butter and sugar; add well-beaten egg.
Mix the flour, salt and baking powder; stir in gradually alternating with milk.
Beat thoroughly and pout into 12 greased muffin cups.
Bake 25 minutes.
Makes 12 muffins.
Notes:
I added 1 tsp vanilla and topped the muffins with just a tiny bit of vanilla sugar.
These reheat well in the microwave.
