These muffins have great flavor.


List of Ingredients





3/4 c sugar
1/4 c butter, softened
1/2 tsp grated orange rind
2 eggs
2 c flour
2 1/2 tsp baking powder
1/2 tsp salt
1/4 tsp nutmeg
1 c milk
1/2 c golden raisins
1/2 c chopped pecans
poppy seeds to taste




Recipe




Preheat to 400.
In a large bowl, cream together the sugar and butter until the mixture is light.
Add the grated orange rind and mix.
One at a time, add the eggs to the butter mixture, beating well after each addition.
Mix the dry ingredients together.
Alternate adding the dry ingredients and the milk, beginning and ending with the dry ingredients.
Carefully stir in the raisins, pecans and poppy seeds.
Line 18 muffin tins with papers.
Fill muffins about 3/4 full.
Bake for 20 minutes.

Notes:
I used large eggs, unsalted butter and omitted the raisins.
