List of Ingredients
4 bone in chicken breast halves
2 tbsp flour
2 tbsp olive oil
2 small red onions, quartered
16 fresh baby carrots
1 lb new potatoes, quartered
1 1/2 c Swanson's chicken stock
3 tbsp lemon juice
1 tbsp fresh oregano leaves
1 tbsp chopped fresh thyme

Preheat oven to 350.
Season chicken as desired then coat with flour.
Heat oil in skillet over medium-high heat. Brown chicken on all sides. Remove
Add onions and potatoes to skillet and cookfor about 5 minutes.
Add carrots, stock, lemon juice and oregano. Heat to boiling.
Place chicken back in skillet and cover.
Place inoven and bake for 20 minutes; remove lid and bake 15 additional minutes or until chicken is cooked and veggies are tender.
Sprinkle with thyme and serve.
Notes:
I used boneless, skinless chicken breasts.
