List of Ingredients
4 pork chops, well trimmed
salt and pepper
1 can, 15 oz, black beans
1 small onion, chopped
1 green pepper, chopped
1 c bread crumbs
1/2 tsp Italian seasoning
1/2 c uncooked long grain rice
1 can, 8 oz, tomato sauce
Recipe
Slice a pocket in each pork chop.
Season with salt and pepper.
Combine black beans, onion, green pepper, bread crumbs, Italian seasoning and rice.
Stuff each cop with mixture.
If needed, secure chop openings with a wooden toothpick.
Pour remaining mixture in crock pot.
Top with chops.
Spread tomato sauce over all.
Cover and cook on low for 8 to 10 hours.
4 servings.
