    Wild and Cheesy Chicken

    List of Ingredients





    1 box Uncle Ben's long grain and wild rice
    2 tbsp butter or margarine
    1/4 c green pepper, diced
    1/2 c diced celery
    1/2 c green onion and tops, chopped
    1 (can) 4 oz sliced mushrooms, drained
    1 can (10 1/2 oz) cream of mushroom soup
    2 c cooked chicken, cubed **
    2/3 c milk
    1 c grated cheddar cheese

    Recipe





    Cook rice according to package directions.

    Melt butter in a skillet, then add green pepper, celery, onion and mushrooms. Saute gently until tender.

    Combine rice, sauted ingredients and remaining ingredients. Pour into a buttered casserole dish.

    Garnish with silvered almonds, if desired.

    Bake at 425 for 30 minutes.

    NOTES:
    I use 3 to 4 cups of chicken.
    May replace chicken with cooked turkey or pheasant.
