    Cookwise by Shirley Corriher

    Recipe Introduction

These are so good. They are just a bit messy to make but the results are well worth it.

    List of Ingredients

    2 cups self rising flour

    1/8 tsp baking soda

    1/2 tsp salt

    1/4 cup sugar

    4 tablespoons shortening

2/3 cup heavy cream or whipping cream

    1 cup buttermilk

1 cup regular flour (not self rising) for shaping

    2 tablespoon melted butter

    Recipe

Preheat to 425 degrees and spray a round cake pan with nonstick cooking spray.

Combine the self rising flour, salt, baking soda and sugar in medium mixing bowl.
Work the shortening into the flour mixture until there are no shortening lumps larger than a big pea.

Stir in the cream and buttermilk and let it stand for 2 or 3 minutes.
Stir to mix. It will look like cottage cheese

Pour the 1 cup of regular flour onto a plate or pie tin. Flour your hands well.
Spoon a biscuit sized lump of wet dough into the flour and sprinkle some flour over the wet dough to coat the outside.
Pick up the biscuit and shape it roughly into a soft round.
At the same time, shake up some of the excess flour and place it in the cake pan.
Repeat until all the dough is used.

Bake just above the center of the oven until lightly browned---15 to 20 minutes, then brush with melted butter.
Cool for 1 or 2 minutes in the pan, then dump out and cut biscuits apart.

    _____

Note: If self rising flour is not available, use a total of 1 1/2 tsp baking powder.
