Blueberry Coffee Cake

Excellent coffee cake.


List of Ingredients




2 c flour
3/4 c sugar
2 1/2 tsp baking powder
3/4 tsp salt
1/4 c oil
3/4 c milk
1 egg
2 c blueberries, fresh or frozen (Thaw and drain)

Sugar topping:
1/4 c butter, softened to room temperature
1/2 c sugar
1/3 c flour
1/2 tsp cinnamon

Recipe



Topping:
Combine ingredients; use a pastry blender and mix until it resembles coarse crumbs.

Cake:
Preheat to 375.
Combine flour, sugar, baking powder, salt, oil and egg.
Mix well.
Fold in blueberries.
Pour into an ungreased 8 inch square pan.
Sprinkle with sugar topping.
Bake for 50 minutes or until a toothpick tests clean.

8 servings.
