    Best when warm and sprinkled with a little cinnamon.

    List of Ingredients




    2 c sifted flour
    3 tsp baking powder
    1/2 tsp salt
    3 tbsp sugar
    1 egg
    1 c milk
    4 tbsp melted shortening or salad oil
    1 c fresh blueberries

    Recipe



    Sift flour, baking powder, salt and sugar.
    Beat egg, milk, and oil or shortening together.
    Mix wet ingredients with dry.
    Stir enough to moisten all ingredients.
    Add blueberries.
    Fill greased muffin tins 2/3 full.
    Bake at 425 for 20 to 25 minutes.
    Makes 10 to 12 muffins.

    Notes:
    Next time, I will add cinnamon and vanilla.
    I used a large egg, lowfat milk and oil; frozen blueberries dusted with flour.
