    List of Ingredients




    1 1/3 c flour
    1 c chopped pecans
    1/2 c packed brown sugar
    2 tsp baking powder
    pinch of salt
    1/2 c milk
    1/4 c melted butter
    2 eggs, beaten
    1/2 tsp vanilla

    Recipe



    Combine flour, pecans, brown sugar, baking powder and salt.
    In a different bowl, mix together milk, butter, eggs and vanilla.
    Pour wet into dry and stir just until moistened
    Spoon into 15 greased muffin pans, filling half full.
    Bake at 350 for 20 to 25 minutes.

    Makes 15 muffins

    Notes:
    I used large eggs, unsalted butter and lowfat milk.
    Baking time was 22 minutes.
