    Dried Cherry and Pecan Muffins

    These are yummy! The flavorful dried cherries add a wonderful surprise for your tastebuds.


    List of Ingredients





    1 3/4 c flour
    1/3 c sugar
    2 tsp baking powder
    3/4 tsp salt
    1/2 tsp ground cinnamon*
    1/4 tsp ground nutmeg
    2 eggs
    3/4 c milk
    1/4 c unsalted butter, melted and cooled
    1 tbsp finely grated orange zest*
    3/4 c dried cherries
    1/2 c finely chopped pecans



    Recipe




    Preheat to 400. Grease 12 muffin cups.
    Sift flour, sugar, baking powder, salt, cinnamon and nutmeg together.
    In a different bowl, whisk eggs until well blended.
    Add milk and melted butter, whisk to combine.
    Add whisked mixture to dry ingredients; mix slightly, do not over mix.
    Add orange zest, dried cherries and pecans; stir just to mix. Batter should be lumpy - over mixing will make the muffins tough.
    Spoon batter into prepared muffin cups and bake for about 15 to 20 minutes, until golden brown.
    Remove and let cool in pans for a few minutes, then remove.
    Serve warm.
    makes 12 muffins.

    Notes:
    *I used a heaping 1/2 tsp of cinnamon.
    I used large eggs, lowfat milk.
    I used a generous 1/4 tsp dried orange zest.
    I baked for 16 minutes.
    These reheat well in the microwave.
