    Pumpkin Muffins

    List of Ingredients




    Pumpkin Muffins

    3 1/2 eggs
    2 2/3 c milk
    1 3/4 c vegetable oil
    7 c flour
    3 1/3 c sugar
    10 1/2 tsp baking powder
    3 1/2 tsp salt
    4 tsp cinnamon
    2 tsp ginger
    1 tsp ground cloves
    1 15 oz can pumpkin
    1 3/4 c raisins, optional

    Recipe



    Preheat to 400. Grease 42 muffin cups.

    Beat eggs; stir in milk and oil. Add pumpkin and mix. If raisins are desired, add now.

    Add dry ingredients and spices, mixing just until flour is moistened. Batter will be lumpy.

    Fill muffin cups about 3/4 full. If desired, sprinkle tops with sugar. Bake for 20 minutes, or until golden brown. Immediately remove from pans.


    NOTES:
    We like just a tiny sprinkle of sugar on top.
    Do not use whole wheat flour.

    For 1 dozen muffins, use same recipe but reduce the ingredients as follows:
    1 egg
    3/4 c milk
    1/2 c oil
    2 c flour
    1/3 c sugar
    3 tsp baking powder
    1 tsp salt
    1/2 c pumpkin
    1 tsp cinnamon
    1/2 tsp ginger
    1/4 tsp ground cloves

    optional: add 1/2 c raisins with the milk
