Simple Sour Cream Spice Cake
List of Ingredients
8 tbsp (1/2 c) unsalted butter, at room temperature
1 c packed light brown sugar
2 large eggs
1 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground allspice
1/4 tsp salt
2 c flour
1 c reduced fat or regular sour cream
Recipe
Preheat to 350. Grease a 9-inch square baking pan.
In a large bowl, mix together the butter and sugar with an electric mixer on high speed for 3 to 5 minutes, or until pale and fluffy. Scrape down the sides of the mixing bowl.
Beat eggs in one at a time and mix well after each addition. Scrape bowl.
Add baking powder, baking soda, spices and salt. Beat on low speed until well blended. Scrape bowl.
With the mixer running, add 1/2 c flour, followed by 1/3 c sour cream - do not wait for flour to be completely blended in before adding sour cream.
Add remaining flour and sour cream in same way. Mix only until blended.
Spread in the prepared pan and bake about 1 hour, or until the cake is light gold in color and a cake tester comes out clean.
Place pan on a wire rack to cool for 20 to 30 minutes. Then remove from pan and allow to cool on a wire rack until completely cool. Serve soon or wrap airtight and let stand at room temperature overnight.
Sift a little powdered sugar on the top before serving.
Note:
I used low fat sour cream. Very nice flavor and texture.
