    These are very easy to make and the flavor is wonderful.

    List of Ingredients




    1 c flour
    1 c quick-cooking oats
    3/4 c sugar*
    1 tsp baking powder
    1 tsp baking soda
    1 egg, beaten
    3/4 c milk
    1/3 c oil
    1/2 c coconut*

    Topping:
    3 tsp sugar
    1/4 tsp cinnamon

    Recipe



    Combine flour, oats, sugar, baking powder and baking soda. Mix well.
    In a small bowl, comibne egg, milk and oil.
    Mix well.
    Make a well in the dry ingredients and add liquids, mixing just until the dry ingredients are moistened.
    Add coconut and stir.
    Preheat to 375.
    Lightly grease muffin pan and fill each 2/3 full.
    Combine the topping sugar and cinnamon and mix well.
    Top each muffin with 1/4 tsp of the cinnamon and sugar mixture.
    Bake for 18 to 20 minutes or until the tops are golden.
    Serve warm.
    Makes 12 muffins.

    Notes:
    *Original recipe called for 3/4 c brown sugar and 1/2 c chopped nuts.

    I used a large egg and baked for 19 minutes.
