    Buckwheat Pancakes

    Good flavor and quite filling.

    List of Ingredients




    1/2 c buckwheat flour
    1/3 c flour
    1 tsp baking powder
    1/2 tsp baking soda
    dash salt
    2 large egg whites
    1 c buttermilk or soured milk
    2 tbsp oil, olive or vegetable
    1 tbsp molasses

    Recipe



    Combine dry ingredients.
    Combine wet ingredients.
    Mix wet and dry and stir just until combined.

    Cook as you would for any pancake, about 3 minutes on the first side, 2 minutes after flipping.

    6 pancakes

    Notes:
    The batter was very thin; I kept adding more flour & buckwheat flour to thicken it. Next time, I will increase the flour amounts to 3/4 c buckwheat and 1/2 flour, then adjust as needed.
    I used large eggs, buttermilk, olive oil and honey rather than molasses.
