    Cinnamon Raisin Coffee Cake

    List of Ingredients




    1 1/2 c flour
    1 tbsp baking powder
    1/2 tsp salt
    3/4 c sugar
    1/4 c shortening
    1 large egg, lightly beaten
    1/2 c milk
    1 tsp vanilla
    1/2 c sugar*
    2 tbsp flour
    2 tsp cinnamon
    1/2 c raisins
    2 tbsp melted butter or margarine

    Recipe



    Combine 1 1/2 c flour, baking powder, salt and 3/4 c sugar.
    Cut shortening in with a pastry cutter until well blended.

    Combine egg, milk and vanilla; stir well.
    Add to dry ingredients and stir until blended.
    Set aside

    Combine 1/2 c sugar, flour, cinnamon and raisins.
    Stir in melted butter.

    Spoon 2/3 of batter into a greased and floured 9 inch round cake pan.
    Top with cinnamon/raisin mixture.
    Top with remaining batter.

    Bake at 375 for 25 minutes or until golden.
    Makes 1 coffee cake.

    NOTES:
    *Original recipe calls for 1/2 c brown sugar.

    I baked the cake for 28 minutes.
