    Coffee Cake using Yogurt

    This is good but not as moist as I prefer. I think sour cream may be a better choice than yogurt.

    List of Ingredients




    Topping:
    3/4 c nuts, chopped
    1 1/2 tsp ground cinnamon
    3/4 c sugar

    Cake:
    1 1/4 c sugar
    3/4 c butter at room temperature
    3 c flour
    1 1/2 c yogurt or sour cream
    3 eggs
    1 1/2 tsp baking powder
    1 1/2 tsp baking soda
    2 tsp vanilla

    Recipe



    Combine topping ingredients and set aside.

    Prepare a bundt pan.
    Preheat to 350.
    Combine butter and sugar in mixing bowl; beat until light and fluffy.
    Add remaining ingredients and beat 3 inutes at medium speed.
    Pour 1/3 of batter into bundt pan; top with 1/3 of topping.
    Repeat 2 more times until all batter and topping are used.
    Bake 60 to 65 minutes or until the cake pulls away from the sides of the pan.
    Cool 20 minutes, then remove from pan and cool completely.
    Glaze if desired.
    12 servings.

    Notes:
    I used pecans, unsalted butter, low fat yogurt, and large eggs. I baked for 60 minutes.
