    Peanut Butter Pancakes

    These were good and very filling. I didn't find the peanut butter flavor to be very strong and think it might be better with more flavor. I used a natural peanut butter, just peanuts and salt.


    List of Ingredients





    1 1/2 c flour
    1 tbsp sugar
    2 tsp baking powder
    1/4 tsp salt
    2 eggs, lightly beaten
    3/4 c chunky peanut butter
    1 1/2 c milk

    Recipe






    Combine dry ingredients in a mixing bowl; stir.
    In another mixing bowl, combine peanut butter and eggs. Stir until well mixed.
    Carefully stir the milk into the peanut butter and egg mixture. Stir until combined.
    Add wet ingredients to dry. Stir just until combined but still slightly lumpy.

    Cook over medium heat on griddle or in a skillet.

    Serve with syrup, honey or jelly.

    Makes 14 pancakes.


    NOTES:
    I used large eggs, lowfat milk and natural peanut butter.
