    International Gourmet Pancakes and Waffles

    These are light and soooo yummy!

    List of Ingredients




    1 1/2 c sifted flour
    3 tbsp sugar
    2 tsp baking powder
    3/4 tsp salt
    2 eggs, separated
    1 1/2 c milk
    1/4 c melted shortening or cooking oil

    Recipe



    Sift the dry ingredients together in a large mixing bowl.
    Separate eggs, saving both yolks and whites.
    Beat yolks until they are thick and lemon colored.
    Add in milk and oil (or melted shortening).
    Stir liquids into sifted dry ingredients.
    Beat just until the dry ingredients are moistened.
    In another bowl, beat egg whites until stiff peaks form.
    VERY carefully, fold egg whites into the batter.

    Pour batter onto heated waffle iron and bake until lightly browned.
    Makes 3 9-inch square waffles for 12 4-inch waffle.


    Notes: I used large eggs at room temperature, low fat milk and pure canola oil.
