    St. John's Banana Bread

    Recipe Introduction


    This is great for breakfast. It is not overly sweet and the texture is more like that of a cake than bread. It is moist and the flavor is not overly "banana-ish".

    List of Ingredients




    1/2 c butter, softened to room temperature
    1 c sugar
    2 eggs
    2 c sifted flour
    1 tsp baking soda
    1/2 tsp salt
    3 large bananas, smashed
    1 c chopped nuts, opt.

    Topping:
    1 tbsp melted butter
    2 tbsp sugar
    1 tsp cinnamon

    Recipe



    Preheat to 350.
    Cream butter and sugar.
    Beat eggs in one at a time.
    Sift flour, baking soda and salt into egg mixture and mix.
    Add mashed bananas and nuts, if desired. Mix.
    Pour into greased 9 x 13 pan.
    Bake for 50 to 60 minutes* (see notes).

    Topping:
    Mix cinnamon and sugar.
    While cake is warm, pour melted butter over the top.
    Then sprinkle on cinnamon sugar mixture.

    NOTES:
    I used large eggs, unsalted butter, 4 small bananas and omitted the nuts.
    I will reduce baking time to 40 - 45 minutes as it was a bit over baked at 50 minutes.
