    Banana Chocolate Muffins

    Moist and delicious.

    List of Ingredients






    1 1/4 c flour
    1 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp salt
    3/4 c sugar
    1/4 c cocoa
    3 small bananas, mashed
    3 eggs
    2 c tbsp vegetable oil
    2 tbsp buttermilk
    1 tsp vanilla

    Recipe





    Combine flour, baking powder, baking soda, salt, sugar and cocoa.
    Mix and create a well in the center.
    Combine bananas, eggs, oil, buttermilk and vanilla; mix.
    Add to dry ingredients, stirring just until moistened.
    Spoon into 12 greased muffin tins.
    Bake at 400 for 15 minutes.
    Cool in pans for 5 minutes then remove to a rack to cool.
    Serve warm or at room temperature.
    Makes 1 dozen.

    Notes:
    I used large eggs.
    For a lower fat variety, replace eggs with 1/2 c egg substitute.
    I baked for 17 minutes.
